Stir the vinegar and water together in a mixing bowl and toss the apple pieces with it.
Combine the sugar, spices, salt, and cornstarch in a pot and whisk them together. Whisk in your apple juice and bring it to a boil over medium heat.
Add the apple pieces to the liquid and stir to combine well. Bring the filling back to a boil and cook for about 10 minutes.
Put the filling in a bowl, cover, and refrigerate overnight (or up to 3-4 days).
