Maple Ginger Roasted Beets

Ingredients
  

  • 4 lbs beets
  • 6 tbsp garlic infused oil
  • 2 tbsp grated fresh ginger
  • 1 tbsp ground ginger
  • 1 tbsp salt
  • 1/2 cup maple sugar

Method
 

  1. Preheat your oven to 425*F. Line 2 rimmed baking sheets with foil and grease lightly with cooking spray.
  2. Peel your beets and cut them into 1-2 inch cubes.
  3. In a large mixing bowl, toss all of your ingredients together until the beets are well coated.
  4. Divide the beets between the two prepared trays and bake for 15-20 minutes, until tender.
